This is a Ramato style of Pinot Gris. It had a long carbonic maceration and was foot-stomped for a few days while fermentation finished.
It was then basket-pressed to neutral French oak barrels for six months.
It's such a sexy amber/bronze colour, and flavour-packed full of toffee apples, mulberries, coffee and spice, with a bittersweet finish. The texture is incredibly luscious and very moreish.
