The rosé is made from 100% Grenache, sourced from the wonderful Eugenio Valenti, from his family estate, Vino Italia. The fruit was harvested by hand and destemmed, then left on skins for just one day. It was then basket-pressed straight to amphora and oak to finish fermentation, before blending in a large concrete egg (called 'Bacon'). Simply racked to bottle with a kiss of sulphur.
